This month Aidie gives us a beautiful winter soup using
seasonal leeks & cheddar cheese. She also gives ideas on how to
use Caramelized Shallots, Grilled Pineapple, & Grilled
Mushrooms as extras to spice up any meal.
ONION AND LEEK SOUP WITH CHEDDAR
CHEESE
A delicious, easy and inexpensive soup to make, perfect for
winter time using winter vegetables. What is also fabulous is that
you are more than likely to have all of these ingredients to hand.
Leeks are a member of the healthy
onion, garlic family of vegetables. The cheddar cheese when melted gives the
soup a creamy velvet flavour. Colby cheese which was developed in
Colby, Wisconsin can be used also.
 3 tbsp butter
2 large onions, halved then finely sliced
1 leek, washed and finely sliced
2 tbsp flour
Freshly grated nutmeg
500 ml dry white wine
500 ml chicken stock
100g cheddar cheese, or Colby
Freshly ground black pepper
Small bunch of parsley, finely chopped
